Desi Kankrej Cow:The Kankrej cow, also know as the Bahubali cows due to their enormous size and huge horns, is a famous native indigenous cow breed of Kutch, Gujarat. Our cowherd community members practice age-old methods of cow keeping; hand milking, untied open grazing, natural mating, cruelty-free care and celebrate festivals to glorify the presence of cows in our lives.While traveling to Kutch interiors we met the traditional cowherd/pastoral communities also called the Maldhari community, have been overcoming challenges to care for Kankrej cows for hundreds of years with the best of sustainable processes. A2 Milk: The Kankrej cows are pro at adjusting to extreme desert like hot and cold weathers. Walking hundreds of kilometres in a herd of many other Kankrej cows, they graze freely in the grassy pastures which have many varieties of shrubs and herbs. The cowherd communities lead the herds with their expertise towards the best of organic pastures they can look around. This makes the a2 milk high in nutrition. For the cowherds, the Kankrej cow isnt a commodity, rather a community member whom they nurture with affection and love. The a2 milk from such Kankrej cows are a boon for human health.A2 Ghee Preparation: The ghee is prepared in the traditional fermentation process. Cows are hand milked. The a2 milk is converted to curd. This curd is churned to extract fermented butter which is then heated to get highly aromatic and divine ghee. Such curd cultured ghee prevents from cholesterol and fat build-up in the body and helps provide good bacteria to the gut. Kudej ghee is the best of native superfoods. This process is done by our farmer cowherd community experts who have been making ghee since generations, with utmost love and care.
